Ingredients
- 1 unripe green papaya
- 1 large carrot
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoon fish sauce
- 1 teaspoon sugar
- 1 clove garlic, grate or finely minced
- 1/4 teaspoon salt
- 3 tablespoon oil
- 1/4 cup rice vinegar
- 2 tablespoon chopped roasted peanuts

Instructions
- To make the dressing: combine all the ingredients and set aside to let the sugar dissolve.
- Peel and coarsely grate or shred papaya, discarding seeds and inner membrane. Cut the carrots to the same width and length as the papaya and set aside.
- Combine the papaya and carrot in a separate bowl. Pour dressing over the top and give a gentle toss to combine.
- Sprinkle with the chopped roasted peanuts.
